Dedication to Red Vinifera Wines at Fox Run Vineyards

Fox Run Vineyards red wine pressing

Shortly after Scott Osborn purchased the property, red grape wines were planted on the estate. Over twenty acres of Fox Run’s vineyard acreage are planted to five red varieties; Pinot Noir (3 acres), Merlot (6.8 acres), Lemberger (5.5 acres), Cabernet Franc (3.3 acres) and Cabernet Sauvignon (2.9).

Fox Run’s Cabernet Franc/Lemberger is our version of the two-grape blend that is fast becoming a Finger Lakes classic. Johannes Reinhardt, the winemaker at Anthony Road Wine Co., first created this blend and shared his findings with Peter Bell. While many of the most recent vintages have been a 50/50 spilt of the two grapes, the blend showcases two strong varietals that exceed expectations of red wine in the cool climate of the Finger Lakes region.

Lemberger has been part of the Fox Run portfolio since 1997. The first Lemberger grapes were planted in 1995. The five and half acres of Lemberger are the largest planting of this German/Austrian grape in New York State. Other names for Lemberger are Blaüfrankisch (Austria) and Kékfrankos (Hungary). Lemberger grapes have no relation to Limburger cheese.

A majority of the red wine grapes are picked by hand when ideal ripeness levels have been achieved. Grapes are separated from the stems and inoculated immediately upon crushing, ensuring the maximization clean flavor development.

As the must ferments in open top bins or tanks, grapes are stirred to reincorporate the cap by manually punching down (bins). Seven to ten days after inoculation, the must is pressed and transferred into tanks where the new wines settle and then racked into barrels.

A variety of oak barrels are used at Fox Run; French, American, and some Hungarian. New barrels are conditioned by fermenting Chardonnay in them at least once before used for red wines. A mix of barrel types is used with all varieties to create complexity and balance. Wines are aged from eight to 18 months, depending on the variety and the flavor development. Cabernet Franc is aged largely in French oak as these barrels dial up the chocolate and spice notes we enjoy in this wine. Lemberger favors American oak aging as this wine benefits from vanilla sweetness and length which American oak lends.

There is a special place in Fox Run’s heart for Pinot Noir. The 1995 Reserve Pinot Noir was awarded the Governor’s Cup at the 1997 New York Wine & Food Classic.
